Nestled in downtown San Francisco, the Proper Hotel recently launched an exclusive dining experience featuring an 11 course, communal tasting menu with dedicated wine pairings inside a private dining room dubbed Gilda’s Salon, that was designed by icon Kelly Wearstler.
Aside from the delicious design, guests will relish in the fare curated by Michelin-starred chef Jason Fox’s. The seasonal menu will be comprised of locally sourced ingredients such as Mendocino sea urchin, locally foraged mushrooms and greens and Japanese seafood such as firefly squid and wild horse mackerel. “We started the Gilda’s Salon Dinner Series as a way to offer a unique experience within an intimate setting, which happens to be one of the most tastefully designed spaces by Kelly Wearstler,” says Fox. “As we are only preparing food for twelve guests per night, we are able to use ingredients, some harder to procure, and techniques, some extremely difficult to reproduce in greater quantity, that we wouldn’t be able to feature in a larger room. It gives us a chance to have some fun and interact with a smaller group, while also being able to show off and highlight a little more of our fine dining chops.”
